Hot Wings
“This is one of a collection of recipes that I created for this years Veganuary. These vegan chicken-style wings are so simple and delightfully decadent. They are both vegan AND gluten free.”

Serves / makes - 2 portions
Ingredients
1t salt
1t dried thyme (optional)
2T smoked paprika (optional)
1/2t dried oregano (optional)
1/2T celery salt (optional)
1T garlic powder (optional)
1/2T dry mustard powder (optional)
1.5T white pepper (optional)
1/2T ground ginger (optional)
1/2t cayenne pepper (optional)
1/2 cup cornstarch / cornflour
2x400g cans of green/immature jackfruit
Spray sunflower oil (if baking) or liquid sunflower oil (if frying)
(Use whichever spices you like / have at hand. All of the flavour comes from the spices so you will need them to make the jackfruit tasty. My mix is KFC style with a spicy kick.)

Large mixing bowl
Colander
Tray or plate
Large baking tray (if baking)
Frying pan (if frying)

Method
Heat your oven to 220c/425f/GM7.
Put the salt and spices in a bowl and mix well, using a hand whisk. This will remove any lumps.
Squeeze all of the water out of the jackfruit, this is a very important step. You can crush the jackfruit slightlky, this will allow the spices to get into the jackfruit. Put the jackfruit on a tray or plate.
Add 1/4 of the spice mix to the jackfruit. Massage it in well and rest it for 15 minutes.
Mix the remaining spice mix with the cornflour/starch. Toss the jackfruit in the cornflour mixture then place on a baking tray sprayed with oil. Spray the jackfruit with more oil.
Bake for around 30 minutes until the jackfruit is crispy. Serve immediately. The jackfruit can be re-baked and will crisp up again.
