OUR 35+ HOUR ONLINE COURSE will help you understand vegan nutrition
and apply that knowledge to creating dishes, menus and meal plans
This course is for you if you are:

Not scientifically minded! This course will enable you to understand nutrition and apply it to real-life cooking
The course is delivered through pre-recorded video content, written content and feedback via email. Your work will be assessed throughout the course so that you can see your strengths and know what areas you need to work on more.
In this course you will learn:
What are the different aspects of nutrition you need to consider
What is your role as a food creator to know about nutrition and make nutritious food
What are macros, the role they play in nutrition, the vegan ingredients that are good sources of the various macro nutrients
What are vitamins and minerals, the role they play in nutrition, the vegan ingredients are good sources of the various vitamins and minerals
What is bioavailability and what role this plays in nutrition
How to cater for a variety of food allergies
How foods can be combined to maximise nutrition
Which techniques can used to maximise nutrition
Specific foods for a healthy vegan diet
Specific nutrition needs for other age groups, people with certain conditions
How to bring knowledge of nutrition into your work as a vegan food creator
Practical applications for creating healthier food within budget and time constraints
How to create recipes, menus and meal plans that match the nutrition needs of your customer
Dates and time:
This course is available for you to start whenever is convenient for you.
Students will receive access to the course content - videos and a written handbook (as a PDF) to work through at their own pace. We have students living in different time zones therefore we are unable to do ‘live’ classes.
The course content takes 35 hours to work through however, you may want to spend more time going over some of the classes.
Cost: The total cost for this course is usually £225. We currently have a discount on this course so it is now £95.
How to access the course: You will need use of a laptop, tablet or smartphone to access the course content. We have a private study group for our students on Facebook.
All course purchases give you access to the course for one year. A subsequent year extension is available with a fee of 30% of the course price.

Rohini Bajekal, Nutritionist, Plant-Based Health Professionals UK
Rohini Bajekal is a nutritionist (MA Oxon, MSc Nutrition and Food Sciences, Dip IBLM) and a Board-Certified Lifestyle Medicine Professional. She is based in London where she provides evidence-based nutrition and lifestyle advice to her clients and has previously worked in India and Singapore.
Rohini is a Board Member and Head of Communications at Plant-Based Health Professionals UK - an organisation that educates health professionals, members of the public and policy makers on the benefits of whole food plant-based nutrition in preventing and treating chronic disease. A keen recipe developer, Rohini is passionate about making delicious, affordable and nourishing plant-based meals. She is a Cookery Teacher at Made in Hackney, the UK's only eco-community cookery school and charity.
As a women's health advocate, Rohini is Brand Manager for Women for Women’s Health (WfWh), a voluntary service set up to empower women of all ages to make lifestyle choices that will help improve their own health as well as that of their families.
Day Radley, Chef, Food Writer and Founder of The Vegan Chef School
Chef Day Radley has been a professional chef for over a decade and vegan for 26 years. She has worked as a Head Chef and Executive Chef in restaurants, as a private and personal chef for celebrities, professional athletes and royalty and as a cooking teacher. Chef Day created The Vegan Chef School in 2018, launching the school on November 1st, World Vegan Day. Since that time over 100 students have been on her Fast Track Vegan Chef course, which helps people move into a career in vegan food.
Through her work as a private chef and executive chef Chef Day developed her skills as a recipe developer, specialising in healthy vegan cuisine. She has since worked with Birds Eye, PepsiCo and a variety of vegan food start up businesses, creating ideas for new vegan products. She continues to share her food knowledge through the school and various magazines she writes for. In 2020 Chef Day published her first cookbook, in collaboration with the animal charity Miracle’s Mission. Day is an ambassador for this charity which helps sick and disabled animals around the world.
