Sweet Potato Patties
“Kids LOVE these patties!!! They are sweet and an attractive colour. You can mix it up by adding your favourite spices and herbs. This is a great recipe for batch cooking / freezing, simply make more than you need and freeze them before baking on a single layer. Once frozen bag them up to save freezer space. ”

Ingredients
1kg sweet potato
200g white quinoa
240ml water
2 teaspoons stock powder
200g petis pois or peas
5 spring onions, finely chopped
1 cup gluten free breadcrumbs
2 tablespoons extra virgin olive oil

Method
Peel and chop the sweet potato into small chunks. Put the sweet potato in a large saucepan and fill with cold water. Bring to the boil and cook till very soft (you can also steam the potato if you prefer). Drain well and mash roughly.
Boil the quinoa in the water and stock. Cook till very soft. Add the quinoa, spring onions and breadcrumbs to the potato. Mix well. Add salt if necessary. Add the petis pois. Mix carefully so you don't squash them.
Roll the mixture out between two sheets of baking paper, to 4cm deep. Cut out rounds using a cookie cutter. Brush with a little oil. Bake at 230c for 30-45 minutes, until browned.
