Easy Lemon Pasta

Difficulty - Easy

Serves / makes - 2 portions

Ingredients

300g spaghetti, I used gluten free spaghetti

1 unwaxed lemon

100g vegan feta

Extra virgin olive oil

A handful of basil leaves

Salt and pepper, to taste

Equipment

Sauce pan

Microplane, zester or fine grater

Method

  1. Fill a large saucepan with water and bring it to the boil with the lid on. Once the water is boiling add the pasta, cook to the time stated on the packet.

  2. Whilst the pasta is cooking zest and juice the lemon. The zest should be very fine.

  3. Cut or tear the feta into small pieces.

  4. Once the pasta is cooked (either al dente or softer, whichever is your preference) drain it then put the pasta back into the saucepan on a low heat.

  5. Add the lemon zest, lemon juice, feta, a splash of extra virgin olive oil, basil leaves, salt and pepper. Mix the pasta so all of the added ingredients are incorporated well. Serve immediately.
