Banana Bread

Prep time - 10 minutes

Cook time - 30-40 minutes

Difficulty - Easy

Serves / makes - 1 small loaf


Ingredients

1T ground flax seed

3T water

220g bananas (weight without skins, this is approximately 2 large bananas)

50g brown sugar

1/2t vanilla essence

60ml oil

1t apple cider vinegar

80g gram flour

40g potato starch or tapioca flour

1/2t baking powder

1/2t bicarbonate of soda


Equipment

Small bowl

Large bowl

Fork or hand blender

Mixing spoon

1lb loaf tin


Method

  1. Preheat your oven to 180c/360f/GM4.

  2. In a small bowl mix the ground flax seed water, leave to rest for 5 minutes. Put the bananas, sugar, vanilla, oil, vinegar and flax in a large bowl.

  3. Blend with a hand blender till smooth. Alternatively, you can mash the banana with a fork.

  4. Add the flours and raising agents. Mix in well then pour the batter into a small loaf tin.

  5. Bake for around 30-40 until cooked through.
